Ingredients

  • 2 snow crabs
  • 500 g (1 lb) bean sprouts
  • 65 ml (¼ cup) mayonnaise
  • 15 ml (1 Tbsp) ketchup
  • 15 ml 15 ml (1 Tbsp) cognac (optional)
  • 15 ml 15 ml (1 Tbsp) lemon
  • 1 tomato
  • 1 avocado
  • Cilantro to taste
  • Sea water or tap water with coarse sea salt
  • Salt and pepper to taste

Preparation

  • Clean and cook crabs in sea water (or tap water heavily salted with sea salt).
  • Scald the bean sprouts. Cool, pat dry and keep chilled.
  • Clean the crab legs and set aside the meat.
  • Mix the mayonnaise, ketchup and cognac.
  • Scald the tomato, remove the peel and dice.
  • Mix the crab meat, diced tomato, avocado and bean sprouts with the sauce.
  • Salt and pepper.
  • To serve, place a scoop of crab salad on top of a bed of lettuce.
  • Garnish with chopped cilantro.
